Our contributions to a potluck : Nem chua and tofu misozuke

Going to a potluck / salon later today. Here’s what we’re contributing to the feast:

Nem chua wrapped in banana leaves and wax paper and tied with banana leaf cords

This our favorite new way of wrapping nem. We noticed that nem chua wrapped entirely in banana leaves and tied with twines are often difficult to unwrap. Nem chua is one of those great drinking foods that are insistent on being washed down with cold beer, so the problem of unwrapping nem tends to get worse with more practice. By using more resilient and foldable wax paper as the outermost wrap, we could still preserve the aroma and breatheability of banana leaves while flimsier leaf cords are enough keep our nem packages tight.

We’re also bringing lamb nem, which are great grilled (and accompanied by beer) :
